Het TAS2R38-gen bevat de informatie die nodig is om receptorcellen te produceren die zich zowel op de tong als in de maag, de dikke darm, de blaas en de bovenste luchtwegen bevinden. Deze receptoren spelen een belangrijke rol bij het bepalen van de perceptie van de bittere smaak van een individu.
